MANGO PHIRNI: Indian rice pudding

Indian rice pudding generally made of milk sugar and whole rice or broken rice or rice flour. In bengali style rice pudding where we use whole rice(gobindovog) is also known as payesh, southern Indians call it Payasham, northern part of country generally calls it Kheer. Whereas Phirni is made with grounded rice mixed in hot milk sweetened using sugar often decorated with nuts and saffron. Here we have added mango flavour to the phirni.
It is said that Phirni is originated in Indian subcontinent but actual fact are still unknown it was introduced during the Mughal period in India. Phirni is creamy in texture as it is prepared with full fat milk and decorated with nuts and pistachios. Here we have infused its flavour with mango puree.

INGREDIENTS:

  • Basmati Rice 1cup

  • Sugar ½ cup

  • Mango puree 1 tbsp

  • Condensed milk 2 tsp

  • Full fat milk 1 lit

Amount can differ as per quantity of phirni.

PROCESS:

Soak 1 cup basmati rice for 2 hrs.

》In the mean, peel a mango take its pulp in a mixer jar and mix together to make a puree.

》Now after 2 hrs strain the water from rice add the soaked rice in mixer jar add little water and make a paste.

》Paste should be rough i.e. coarse in texture this is needed for phirni. You can also make it using rice flour.

》Heat full fat milk and reduce it to half. Now add the rice paste and constantly stir so that lumps can be avoided.

》Keep on stirring and add ½ cup sugar. Soon the milk gets thicken and add 1 tbsp of mango puree.

》Colour of the pudding changes into a mild yellow or light orangish. Now add 2 tsp of condensed milk which is optional it will add creamy texture also sweetness to the phirni. If not then add 1 full cup of sugar.

》When phirni thickened switch off the gas and pour it in a bowl for maintaining the tradition i have used earthen bowl. Pour it set it and freeze it for 2hrs in refrigerator.

》Once set serve the phirni.
