EGG KABIRAJI

Kabiraji is a special kind of non vegetarian snacks very famous in eastern India, here the cutlet is covered with egg batter. Cutlet can e of egg, chicken, fish, mutton.

Let us follow the recipe below.


Ingredients:

  • Potato 3 big

  • Onion 1 medium

  • Egg 1 boiled, 2 for mixture

  • Ginger

  • Garlic

  • Green chillies

  • Turmeric powder 1tsp

  • Red chilly powder 1tsp

  • Cumin powder 1tsp

  • Salt as per taste

  • Pepper 1tsp


Process:

》Boil potatoes and eggs, smash the potatoes in a bowl, add turmeric powder, red chilly powder, cumin powder, salt and mix them together.

》Slice onion, chop ginger, garlic and green chillies.

》Take a pan add oil when hot add the sliced onion. After some time add ginger garlic and green chillies chopped. You can use ginger garlic paste also.

》Now add the potatoes mixed with masalas, mix everything together very finely.

》Switch off the Gas and let the potato mix to cool.

》Grate the boiled egg in the potato masala. Mix them.

》Take a bowl add 2eggs 1tsp corn flour, 1tsp salt, 1tsp pepper. Whisk it form a egg mixture.

》Take a handfull of potato and roll gently and press to give desired shape. Try to give a square shape.

》Once shaping complete coat with breadcrumb then dip in egg mixture again coat in breadcrumb. Reapeat this process with each potato squares. Keep aside to set.

》Heat pan add adequate amount of oil, keep flame medium to high. Fry the cutlets. Don't fry too deep. It should be just enough fried.

》Once all cutlets are fried lower the flame let the oil cool a little. Now take the egg mixture dip your finger and swing over the pan forming string or net like structure.

》Take the fried cutlet brush one side with little egg mixture and place it on the egg strings on one side now with the help of spoon roll the cutlet over the string.

》Dont take the cutlet out. Again repeat the process of making string just connect it with the cutlet already in pan and roll the cutlet back on the string. High the flame fry a bit and take it down.

》Repeat this process Kabiraji is ready.
