LOITYA FISH (BOMBIL FISH) Scrambled(লটে মাছের ঝুরি): Bengali style spicy fish cuisine.

Lote fish or Loitya fish also known as bombil, bombay duck or bummalo.This is a white coloured soft fish in Bengal people generally makes jhuro (scrambled) of it, but Bombay ducks are prepared in various forms. As fried like a fresh fish, or consumed when dried and salted which is also known as sutki in bengal region. It is also famous in maharashtra region.

● Reduced risks of heart strokes, hypertension, anemia, colon cancer and improves hormonal balance.

● Fish oil present in Bombay ducks proves to be excellent pain killers.

● Dried Bombay ducks are excellent source of calcium.

Ingredients:

  • Lote fish 750g

  • Garlic 4-5cloves

  • Garlic paste 1.5tsp

  • Onion 1 big

  • Green chillies 2pc chopped

  • Turmeric 1tsp

  • Red chilly 1tsp

  • Chopped corriander leaf

  • Sugar and salt as per taste

Process:

》Take some water in the pan along with the fish add some salt and turmeric to it.

》Now boil the fish. This step is necessary because this will help in softening the fish and will help in removing the spinal bone from the fish.

》Boil it for few minute check it if the fish has softened or not, if yes then strain the water.

》Now very carefully remove the spinal bone from the fish. This is a bony fish you cant remove all bones but if we remove the hard bone it will be easy to cook and morely to eat. You can see the video how to remove the bones.

》After removal fish will be bit scrambled texture. 》Now heat a pan add oil to it. Add chopped green chillies and garlic, add sliced onions and add garlic paste. Add salt and red chilly powder. Mix them well.

》Now its time to add the scrambled bombil fish.

》Fry the fish in high flame untill the fish gets dried. Constantly stir it. Once the water is removed it will get the crispiness.

》When the fish is dried and all ingredients are mixed. Lower the flame add corriander leaves. Mix them.

》Switch off the gas. Lote fish jhuri is ready to serve.
