Fuchka (ফুচকা) also known as panipuri or golgappa in other parts of country, whereas in eastern parts its famous as fuchka.
Fuchka is a round ball shapped fried hollow puri which is stuffed with potato chickpea masala, dipped in tamarind water, known as panipoori or jol fuchka(jol or জল means water), and sometimes served with tamarind chatni, dahi and sev which is known as dahi puri or doi fuchka (দই ফুচকা)

Amount of ingredients can change as per requirement.

INGRIDIENTS:
》For making the poori or the fuchka crust:
Maida 1cup
Suji 1cup
Oil 1/2tsp
Baking powder 1tsp
》For masala stuffing we will require:
Potato 2 medium
Onion 1 big
Green chillies 2 pc
Chat masala 1tsp
Salt as per taste
Tamarind
Dahi
Take these above things as per your requirements.
Chickpea was not available when i was making but if you have use it..
PROCESS:
● Take 1cup each maida and suji add 1stp baking powder, 1/2 tsp oil and knead with water.
● We are not using salt in crust because salt can moist the crust.
● Once kneaded keep the dough aside for resting about 10 to 15 min.
● In the mean make the masala, boil potato also chickpeas, if you have, make chickpeas masala with salt and onion and add it with boiled mashed potatoes. Add chopped onion and green chillies, if corriander leaves are available add it too. Now add salt as per taste, some chat masala, mix them well add little tamarind to it for tanginess.
● After 10 min knead the dough once more and cut small balls from it. Press it into pooris but the pooris should be small and thin. Make all the pooris but dont fry rest them for a bit.
● Now add adequent amount of oil, high flame, add the pooris in oil, it will fry in round shape. Flip and fry both side.
● After frying take 1fuchka crack it with thumb. Just hear the cracking sound its mesmerizing. Stuff it with masala add tamarind chatni on it. If you don't have tamarind chatni¹ use tomato ketchup then add dahi over it and sprinkle some sev over it. Dahi poori or Doi fuchka is ready to serve.
¹ Tamarind chatni is prepared by soaking the tamarind for 1hr add little salt to it. After 1hr strain the water remove the pulp and seed. Now take the water boil it add sugar keep on medium flame and constantly check for consistency if it is turning sticky switch off the gas. Tamarind chatni is ready.
