Tadka is a famous dish in roadside dhabas, people often order roomali roti or paratha with daal tadka. Now tadka means tempering (ফোড়ন in bengali), so daal tadka or tadka daal means daal tempered with spices.
In Bengal Tadka daal or Daal tadka is prepared with whole moong daal or green lentils (সোনা মুগ ডাল). This can be also prepared using toor dal (অরহর ডাল), masoor dal (মুসুরি ডাল) or red lentils and even with brown lentils. There are lots of varieties to cook this daal, which is plain tadka, egg tadka, chicken tadka, mutton tadka etc.
My family loves daal tadka and roomali roti, it is easy to cook. Sometimes when we are not in a mood for eating rice in dinner or want to eat something different tadka daal is the best alternative. Dal is a source of nutrients, whole green moong dal is low in calorie high in protein, contains vit A, vit C, high fibre.

INGREDIENTS:
Green lentils or whole moong dal 100g
Bengal gram or chana dal 20g
Onion sliced and diced 2 medium
Green chillies chopped 4-5 pieces
Tomatoes sliced and diced 1 medium
Ginger garlic chopped 1 tsp
Red chilly powder 1tsp
Cumin powder 1tsp
Turmeric powder ½tsp
Garam masala ½tsp
Pepper 1tsp
Corriander leaves
Fenugreek leaves

PROCESS:
□ COOKING DAAL:
》Soak green lentils and bengal gram in water fo 2hr prior or overnight for better results.
》Mix the dry masalas i.e. red chilly powder, cumin powder, turmeric powder, garam masala and pepper in a bowl and mix together.
》Heat oil in pan and add diced onions, diced tomatoes, chopped ginger garlic and green chillies.
》 Now add the dry masala mixture on them and mix them very well.
》 Add both the soaked lentils or dal and stir them well. Add 1tsp if salt and ½tsp sugar, then add water.
》 It will be better if you cook thus in a pressure cooker because we need to boil the dal using pressure. If cooking this part in different vessel transfer everything yo a pressure cooker.
》 Once transferred put lid on the cooker, keep the flame low and wait for 3 to 4 whistle of cooker.
》 Daal is ready time for tadka.
□ TADKA PREPARATION:
》Add oil in pan and little ghee.
》Add sliced onions, tomatoes, chopped green chillies and mix them quickly keep the flame medium to high.
》At this point we will add the prepared daal in the pan. Tadka is done.
》 About the consistency of the daal, it should be thick, smooth gravy.
》Sprinkle chopped corriander leaves and crushed fenugreek leaves (kasuri methi) and turn off the gas.
》Serve this hot with Roomali roti or Paratha or Naan.
